So today has been day 2 of eating healthy and starting insanity! I woke up just a little sore from the fit test, mostly on my lower back. I use to work out 3-4 times a week, and I use to be really fit. But after my sister's wedding, Oct 2012, I just stopped. I ate whatever I wanted, and I really became lazy. Slowly my muscles became less defined, and I gained 18 pounds!! So I promised myself I would diet, be dedicated to working out, and really keep off the weight. Today's work out of insanity was brutal. I was so shocked at how out of shape I was. I couldn't even stretch with Shaun T at the end because I was so exhausted. (Don't worry, I eventually ended up stretching by myself.) I can tell already that I will be extremely sore tomorrow.
I went grocery shopping on Sunday, and planned out my diet for the entire week. However, while eating dinner last night, I realized that I could not eat lemon chicken for dinner every night this week. I know consistency in your diet is the best way to lose weight, but I just couldn't do it!!! So today I looked up healthy chicken recipes, and decided to make this Southwestern Chicken roll up recipe I found online. Click here to see the recipe. I added steamed veggies and quinoa to my spruce up my meal just a little bit. Next time I cook this meal, I think I will add a little more picante sauce. All in all, I was really happy with the way my meal turned out!
Tonight I plan on just sitting in front of my TV, and falling asleep to HGTV!!! Hopefully I won't be too sore tomorrow!!
